- 1 whole Potato

- 1 cup Peas boiled

- 1 bunch Parsley
- 1 bunch Coriander
- 1 no. Chilli
- 1 no. Bay Leaf
- 2 tbsp Vegetable Oil
- 1 tbsp Olive Oil
- 1/2 cup Water
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Red Pepper
- 1/2 tsp Ginger Paste
- 1/2 tsp Turmeric Powder

Pre-heat the tajine pot and pour the vegetable oil.

Then add the onions, sliced in arches.

Then, start putting the vegetables directly without frying the onion. Put the potato first.

Then add carrot and the courgette.

Add the tomato circles, then put the chilli at the top.

Pour half cup of water.

Mix the spices in a cup with a little of water, and pour them over the vegetables.

Add the parsley, the coriander and the bay leaf.

Pour the olive oil all over the pan, and keep cooking on low heat.

After 15 minutes, add the peas at the corner of the tagine pot.

Put the cover on the tagine pot, and let it cook on low heat till it is ready for serving.
